Shielding has a large surface area around the conductors; shielding vastly increases capacitance. Because of the huge increase in capacitance when shielded wire is used, the capacitive lag caused by using shielded wire can corrupt the intended signals. The shielding is an unintended capacitor.
A capacitor is "two or more conductors separated by an insulator (s)". If there are two conductors in a cable, and each conductor has an insulator, that is one capacitor. Adding a shield around the two conductors is adding another conductor around the two wires. Between each of the two inner conductors and the shield is an added capacitor.
Worse, the shield will carry signal current, making it no longer a shield. A device's own ground noise currents will radiate from connectors and cables if there is a potential difference between chassis and circuit ground (common impedance coupling) because those common-mode noise currents will otherwise use the chassis as a monopole counterpoise.
Fortunately, there are ways to help mitigate these factors so it does not affect the capacitance measurement readings. One of those ways is through active shielding. The FDC1004 features active shield drivers which can reduce EMI interference and help focus the sensing field of a capacitive sensor.
"Signal ground" is both the return path for signal currents and a voltage reference called 0V, the latter substantially because of the former (Ott, §3.2). Cable shields are not grounds, they are noise current sources. Shields separate noise currents from signal currents.
